Meet The Presenters

Melissa Wilson

Principal

Melissa specializes in the operator practice arena and directs the off-premise practice. Leveraging her more than 25 years of consulting experience, Melissa mostly works with chains, multiunit operators and private equity firms on relevant consulting and research engagements.
Lance Reynolds

Senior Manger, Restaurant Operations Consulting

Lance Reynolds spent a decade as a restaurant owner/operator of 4 locations, a catering company & a commissary in Flagstaff, Az. Later Lance founded Food Biz Today, a school for hospitality owners & managers to learn to integrate systems & tools into their operations to increase and maintain profitability in their businesses. In short, Food Biz Today taught restaurants how to make money. FBT expanded to 7 schools, in 3 states, when he decided to sell the company in 2013. Lance is currently the Senior Manager of the Restaurant Operations Consulting group at US Foods. He has spent the last 7 years traveling to over 30 states to train and mentor restaurant operators and consultants while also working as a keynote speaker, panelist and trend analyst at restaurant industry tradeshows and events.
David Henkes

Senior Principal, Technomic

David Henkes is a Senior Principal within Technomic’s Advisory Group and is responsible for directing strategic consulting and research assignments for clients active in the food, beverage and related industries. As a senior member of the firm, his specific responsibilities include client development, engagement oversight, and industry relations. He also oversees the firm’s Beverage Practice.
Kathryn Fenner

Principal, Technomic

Kathryn Fenner has 25 years of experience in the Food Industry, including experience in the Foodservice, Vend, Convenience and Drug Channels. Kathryn has been part of the Technomic team for more than eight years, and is responsible for managing and executing research and consulting programs for manufacturers, restaurant operators and trade associations throughout the foodservice industry. Kathryn also spent many years working for foodservice manufacturers in various marketing, sales and innovation roles. Noncommercial foodservice and foodservice innovation are particular areas of expertise.
Joe Pawlak

Managing Principal, Technomic

Joe Pawlak, Managing Principal, serves as the head of Technomic’s Advisory Group and is responsible for conducting consulting and research engagements for food & beverage manufacturers, trade associations, private equity firms as well as restaurant chains. His experience covers virtually every food, beverage and supply category and channel. His specific responsibilities include project management, study design and planning, analysis of research findings and client business planning immersion.
Donna Hood Crecca

Principal, Technomic

Donna Hood Crecca is Principal at Technomic Inc., where she leads the firm’s Adult Beverage Practice and Convenience Store Practice. As Principal, Donna develops research-based insights and recommendations for leading and emerging supplier and operator companies to enhance their go-to-market and product development programs and strategies. She is a veteran of the foodservice and drinks industries, having covered and consulted for the restaurant, foodservice, convenience store, beverage and beverage alcohol markets for nearly two decades.
Wade Hanson

Principal, Technomic

Since joining Technomic, Wade Hanson, Principal, has conducted and written numerous multi-sponsor and proprietary studies encompassing all foodservice segments. He has extensive expertise in market sizing, market trend evaluation and competitive assessments/benchmarking. During his years with the firm, he has had an active role with key clients in interpreting implications and developing targeted strategic plans.
